A time for quiet

I'm taking life a bit gently at the moment - my path to full recovery isn't as linear as I expected! However, I'm still managing to have fun and happiness in less adventurous ways...

I made a chicken and leek pie (cheated with ready-to-roll pastry, but the filling was from scratch!):

At the weekend we had a lovely evening with friends. (No pictures - too busy chatting and nibbling food!)

Early bedtimes, lay-ins where possible and occasional naps. I can do slow and quiet :)

Nothing like being busy

What an active weekend - I'm certainly starting to work my muscles and build a bit of stamina; my legs are a teensy bit sore today!

On Saturday there was more skiing. I'm trying to get lots of practise in so that I don't lose the skills my instructor taught me and continue to grow in confidence. I did lots and lots of runs. In fact, barring the short break for a cup of tea in the middle, I pretty much skied for two hours straight. And I got to wear my new ski jacket which I treated myself to after being signed off by my coach (up until now I've been skiing in my sailing jacket, which worked just fine but won't cut the mustard on a proper skiing trip).

Sunday turned into skating day. We didn't join the London Friday Night Skate crew for their Sunday stroll because we wanted to take it gently, so instead we pottered up down and around Hyde Park for a couple if hours. The place was packed (well it was 27degC) so we had fun dodging pedestrians, cyclists, other skaters, skateboarders, scooters and other associated Sunday park goers. Sunshine, ice cream and selfies on-the-move. Glorious.


We topped off the weekend with homemade seafood paella (very loosely based on Jamie Oliver's recipe here), dining al fresco :) Long may the warm weather continue!

Pancake time!

Tuesday was Shrove Tuesday so I got out the frying pan and got to work on making pancakes.

The first batch were savoury (leek, mushroom and spinach):

In other news: Following on from last week's "Shocking news", today I wore a rather bright turquoise/mint coloured cardigan to work. I don't remember ever wearing an item of clothing in this colour. Surprisingly no-one commented on it!

A Christmas pie

Ok, I know this is super-late, but I really wanted to share this Christmas tradition and it's taken me a while to get the post written :) Enjoy

Christmas eve means fish and seafood in my house. My mum usually makes a rice creation featuring prawns, mussels and squid. I like to make fish pie...

Start with hardboiled eggs.

Add a selection of fish, which have been gently poached in milk, and some king prawns. This time I went for salmon and cod; sometimes I use a bit of smoked haddock too.

Cover in a white sauce (made from the poaching liquid).

And then smother in mashed potato and some grated cheddar. I try to be moderate with my cheese usage... I usually get carried away...

Baking time! Note the baking tray underneath to catch any minor eruptions around the edge :)

Oh, it was totally yummy. Not the prettiest of meals, but well worth the effort. This version was one of my best and a good contrast with the massive traditional turkey roast that we enjoyed the next day!

Marathon cooking

Two months ago I signed up to a fantastic sounding new company: Kitchen Nomad. The concept is very cool - every month they send you a box packed full of ingredients and recipes all based on the cuisine of a particular country.


This month's box was based on Mexico, which was particularly great because I love Mexican food (it's definitely in my top ten of world foods). I often make Mexican-inspired food (e.g. fajitas or chilli) and frequently choose Mexican streetfood or restaurants when dining out. Fab.

So the box arrived, I got excited and headed straight out to buy the added ingredients that I needed for the taco recipe:

I was ready to roll!

First to make the dough for the tortilla:
This wasn't too tricky, just a bit time consuming to get the dough to come together and then kneed it.

The difficult bit was still to come...

The recipe said:
"Dust the board and your rolling pin with a little flour. Press a ball of dough firmly on the board with two fingers to flatten it into a fat pancake, then roll out to about 2mm thick."

Oh. My. Life. I nearly cried. The dough stuck to the rolling pin. I tried adding more masa harina flour. The dough fell apart when I tried to pick it up, even when I rolled it thicker than the 2mm suggested. Nothing was working. I gave up on the rolling pin and just pushed the dough out with my fingers - better but still couldn't lift it off the work surface.

In the end, I found a recipe on the masa harina packet which said:
"Use a taco press or flatten betwee two pieces of plastic."

Hurrah! Something that worked. Two pieces of clingfilm, a mixture of fingers and rolling pin and finally I was creating flattish, roundish tortillas that I could actually pick up!

I took lots of photos of my attempts to get the dough rolled out, but it's quite a depressing sequence so I will spare you!

I cooked the tortillas and got started on the filling, which consisted mostly of onions, ancho chillies (which are an amazing ingredient - love these!), crème fraîche and chicken. The chicken was optional, but there wouldn't have been much to the filling if I hadn't used it. As it was I only had enough filling for less than half of the tacos that I slaved over!

I have one particular niggle with Kitchen Nomad: I'm not convinced that they test out the recipes before sending them out. I have tried at least four now and all had an ingredient that wasn't mentioned on the actual steps (on this one it was the garlic for the filling. I guessed and added it five mins after the onions). On top of that, there were the portioning problems (not enough filling for the tortillas), and the fact that rolling out the dough the way the recipe says to is basically impossible.

In total, this recipe (which was rated 2/3 for difficulty) took me almost two and a half hours. I know I'm not exactly a chef, but I do cook regularly and felt quite deflated by this experience.

However, there are lots of pros to the Kitchen Nomad system:
  • It is very exciting to get a new box every month in the post and wonder about what might be in the next one.
  • It gives you the chance to try a range of recipes that you may never have eaten, or that you've only ever eaten in restaurants.
  • You find ingredients that you love and want to use in other cooking (ancho chillies - my new favourite!).
  • It definitely shakes up your usual cooking regime - I have particular meals that I churn out on a weekly or monthly basis. I find that having a box of recipes and ingredients encourages me to experiment more and try new things.

Overall, I'm not ready to cancel my subscription yet, but I do hope the recipes come a bit more "tried and tested" in future so that the experience is more fun and less frustrating!

Am looking forward to trying the chilli honey crumble (doesn't it sound amazing?) and the baked feta (well, it is cheese after all!).

Therapy in the kitchen

It's no secret that I'm not great at relaxing, especially when life leaves me feeling stressed. I try all sorts to keep me calm and happy in times of stressy-ness. Examples include:
- relaxing baths before bed
- reading a book instead of playing on my ipad
- exercising regularly
- getting out for fresh air
- taking time out to see friends
- going for a massage

Recently, I've been surprising myself by choosing to cook on stressful days. I like cooking, and I positively love baking (although I'm one of those messy bakers who spends more than half the time trying and failing to clear up!). Still, normally these would be the "grab something out of the freezer"/"heat up some leftovers"/"order a takeaway" type evenings.

And I genuinely feel more relaxed afterwards, which bodes well for getting a good night's sleep and generally feeling less hassled by life! Hurrah for relaxing!

I made pie! (sort of)

A couple of days ago I had visitors for dinner so I decided it was a perfect chance to cross another item off my Summer Ambitions list and make a pie.

However, knowing that my guests were not necessarily huge pastry fans (or at least not to the extent that I am), I rummaged through my pie cookbooks and found a perfect sounding Chicken and Ham Cobbler.

As well as being less pastry based, it was also a lot easier to make - basically making the chicken and ham mixture for the base and a savoury, almost scone-like topping. I didn't have the required casserole dish, but I think my large ceramic did the job. And it was yummy :)

An update on ambitions

Almost exactly a month ago, I wrote a summer ambitions list, so I guess it's time to revisit it and see how I'm getting on!

1) To get surfing again - planned (roughly). I know when I'll be in a good surfing location, haven't booked any lessons yet but this one is definitely happening!

2) Do 3 ballet classes in one week - achieved! In fact I did four classes, including two on the same day. I wish I had the time and money to do this all the time - it was so good for me to concetrate on one thing and work my body a bit harder than normal.

3) Spend some quality time working on my Spanish - not really done. I got as far as downloading a couple of free apps onto my phone. Oops...

4) See some live music - partly done. As predicted, I was in the vicinity of live music at Marvellous Festival, but was busy rigging and setting off the fireworks so it doesn't really count. Will need to see if I can fit this in better in the next few weeks...

5) Make sushi - not got any further with this one :S but I will!

6) Make more pies - - almost done. Had a (pretty dodgy attempt) at making an apple and pear tart a few weeks ago. Also, I am entertaining next week so will crack out the pie recipe books again :)

New things to add to the list:
7) Get to work crocheting again. I popped out to buy beautiful new wool colours the other day and am ready to get to work!

Summer ambitions

I've read some fantastic Summer Bucket Lists recently, including this amazingly long one from meals and moves. That is going to be one fantastic summer!

My list is somewhat less "wow", but I've tried my best to add in some ambition along the way!

1) To get surfing again. I don't mind if it's in the UK or during my summer holiday, but I've got to get back on the board and work on my skills! On the girlie surfing weekend last year, I just about stood up a couple of times and I desperately need to practise more to master this tricky skill. Note to self: do some upper-body workouts before surfing to limit muscle soreness afterwards!


2) Do 3 ballet classes in one week. I'm all set with a timetable of drop-in classes with teachers that have been recommended to me, so there's no reason not to up my number of lessons :)

3) Spend some quality time working on my Spanish. I'm not great with languages and often freeze up when abroad; hopefully a bit of revision and practise will up my confidence and make sure the words that I do know are close at hand in my brain :) Maybe...

4) See some live music. Erm... This one is totally unplanned so I've no idea how and when it might happen. I'll be in the vicinity of live bands in a few weeks when rigging a firework display, but that's hardly the same as being in the crowd.

 5) Make sushi. I've just been gifted a great iPad video-book-guide-thing and have to try it out!

6) Make more pies. I had a bit of a flurry of pie making after Christmas (after receiving two great pie recipe books) and then haven't touched them again!

The salad streak continues

Disclaimer: I am not, in any way, shape or form claiming to eat particularly healthily :)

I don't know what's got into me, but I'm really enjoying eating salad with my dinners!

I've never been a big salad fan, and I don't really rate cold food much at all - if at all possible I will eat three hot meals a day. However, after the surviving the flu (I must have had man-flu as I'm still talking about it!) I started experimenting more. Part of my new-found enjoyment has come in the form of balsamic vinegar - what a genius salad dressing! Beyond that, I don't know where it's coming from but it makes me feel awfully healthy! I've even been trying out different ingredients such as finely chopped mange tout for a bit of crunch...

Less crochet, more running, work and salads

And that title pretty much sums up my first week post-flu!

I'm horribly behind with my running and desperately trying to up the frequency and distance of my runs. Being back to work is surprisingly nice, but draining. And I've actually been eating salads with my dinner, lovingly dressed with a splash of olive oil and balsamic vinegar. Healthy and yummy :)

Veg needed!

This evening, I desperately needed some proper food packed full of veg. Well, actually my brain was telling me that I needed chocolate and a large packet of crisps, but I overrode my initial impulses and decided I really should be eating vitamins :)

I emptied the fridge and found a selection that included: aubergine, sweet potato, button mushrooms and garlic.

That, plus some chicken, pasta and "pretend" double cream produced this yummy, unnamed dish:


Might still treat myself to a small bit of chocked ice cream later too... :)
